Chef Esther mashes up Korean and Japanese staples in this spicy, savory noodle dish. The soup still features a classic long-simmered, rich and creamy pork broth and fresh ramen noodles, but, instead of topping with the traditional Japanese chashu pork belly, she puts her spin on it. Ground pork and smoky bacon are stir-fried with Korean kimchi and green onions for a funky, meaty twist. When mixed all together, you get rich broth, bouncy noodles, and crispy pork stir-fry in every perfect bite.
